How to Freeze BC Spot Prawns
For best results, process your Live Prawns right away. Don’t let your Live Prawns sit in melted ice or fresh water, as the quality will deteriorate fast. If you’re not going to process them immediately, leave the prawns in a cool, dark place (best to use your refrigerator).
1. Prepare an Ice Bath (Optional but Recommended)
Quickly chill the live prawns in an ice water bath for 1 to 2 minutes to slow them down and make handling easier. This also helps preserve texture.
2. Decide: Heads On or Off
Heads Off: Twist off the heads, rinse the tails gently, and pat them dry.
Heads On: Prawns can be frozen whole, but it’s only recommended if freezing immediately after receiving them, as the brain enzyme will continue to affect the flesh after death.
3. Dry and Portion
Lay the tails (or whole prawns) on a towel to dry. Then portion them into meal-size amounts.
4. Pack for Freezing
Use one of these methods:
Vacuum Sealing (Best): Removes air to prevent freezer burn and preserve texture.
Ziploc + Water Method: Place prawns in a freezer-safe Ziploc bag and cover with cold water. Squeeze out air, seal, and freeze flat. The ice layer protects the prawns from air exposure. Some people like to add a little bit of salt to their water for added flavour.
If freezing whole prawns, do it immediately after harvesting to minimize enzyme activity. Lay them on a baking sheet and partially freeze, then transfer to a bag or container of your choice so they don’t freeze in clumps.
5. Label and Freeze
Label bags with the date. Use within 2 to 3 months for optimal quality.
